Green Chicken Chili

Here's the recipe. It's a little complicated, but really good!

Green Chicken Chili

Ingredients:
2 cans chicken breast chunks (drained)
3 cans Cannellini Beans (drained and rinsed)
1/2-3/4 cup chopped onion
1-2 garlic cloves minced
2 cans chopped green chilies (small)
1 tsp – 1 TBL minced/chopped Jalapeno pepper (I used the canned type-already chopped)
1 ¼ cups green enchilada sauce or salsa Verde
28 oz reduced fat chicken broth
1 tsp cumin
Olive oil (about 1-2 tbls)

Put onion and garlic in olive oil and cook until just tender. Dump in all the rest of the stuff and let it simmer until heated through. You can adjust cumin and/or add salt and pepper to taste. Also you can garnish with cilantro and a bit of sour cream. Or dried cherries --- yes it is very good I've done it!

I made this for a luncheon at our office today. Everyone LOVED it!! First time I have not had to lug leftovers home after an office luncheon!!
